This dish takes only five minutes of work. Seriously. And it contains ingredients you already have, or which keep for a while in your fridge. It easily scales up or down to feed one or a crowd and was perfect for a snowy morning here in the Sconnie Nation.

- Nonstick skillet
- Spatula
- Pot lid (or aluminum foil as a suitable alternative)
ingredients
- 1 slice whole wheat bread
- 1 egg
- 1-2 slices Canadian bacon
- 1 cup baby arugula
- Nonstick cooking spray
- Salt and pepper
preparation
With pan on medium-low heat, warm through and lightly brown the bacon. Toast the slice of bread, set it on a bed of arugula, and place the bacon on top of the bread.Reduce the skillet heat to low and coat the skillet with nonstick cooking spray. Crack the egg into the center of the skillet and cover. Set a timer for 3 minutes. Change the laundry, a diaper, etc.
When the timer goes off, season the egg lightly with salt and pepper. Check the 'doneness' of the egg by shaking the skillet back and forth. Does the egg white jiggle? If so, replace the cover and set timer for another 2 minutes.
When the egg white no longer jiggles, use a spatula to remove the egg from the pan and place on top of the bacon-toast-arugula trifecta.
SERVES ONE with espresso and a snow storm
tips and tricks
- Use salt sparingly since the bacon brings plenty of that to the dish.
- The runny yolk basically creates a sauce. Who needs hollandaise?
