Lemon love

I love a rich salad dressing as much as the next foodie, but don't always keep some in the fridge. And, like me, if you've ever read the nutrition labels, perhaps you're ready for a healthier alternative anyhow.

  • Small mixing bowl
  • Whisk
  • Spoon
  • That's all
the ingredients
  • Juice of 1 lemon
  • 2 T olive oil
  • 1 T ricotta
  • Dash of ground nutmeg
  • Salt and pepper
  • 2 cups baby arugula
the preparation
In a mixing bowl, use a whisk to combine all ingredients (except lettuce). Dip a leaf of arugula in the dressing to check the seasoning. Adjust nutmeg, salt, and olive oil accordingly. Like it? Drizzle over a serving of arugula. Love it? I'm glad.

a few notes
  • Buy nesting stainless steel mixing bowls for about $2 a piece at nearly any thrift store with a housewares section. That's a bundle cheaper than the $8-$15 price tags that I found at online stores.
  • Arugula has a strong flavor - hence it's nickname (Rocket) - so taste the dressing on a piece of the lettuce to ensure the combination of flavors works.

  3. I like to use just lemon juice and some honey whisked together. It's light, summery and cheap!
